Quick update
Today I made some granola and fudge with organic honey instead of sugar. Because I'm on a diet and can not eat artificial sugar. It tastes amazing and I totally recommend it. I only used Honey and a few other organic sweeteners. I mixed The fudge mixture into the granola and had a little left over so I put it into an Ice cube mold and in the freezer for an hour. Here are my recipes if you want to try them for yourself. Personally, I prefer it to the granola you can get at Super store and it doesn't cost nearly as much.
Homemade granola
Ingredients
- 2 cups of whole rolled oats
- 1/2 cup of chopped almonds
- 1 teaspoon of sea salt
- 2 teaspoons cinnamon
- 2 tablespoons of coconut oil
- 2 tablespoons of organic peanut butter
- Preheat the oven to 300°F and line a baking sheet with parchment paper.
- In a medium bowl, combine the oats, almonds, coconut oil, cinnamon, salt, and some of the fudge mixture if you would like. Drizzle in the coconut oil and add the peanut butter. Stir until combined. Scoop the granola onto the baking sheet and press the mixture into a 1-inch-thick oval. This will encourage clumping.
- Bake for 15 minutes, rotate the pan halfway, and use a fork to gently break the granola apart just a bit. Bake for 15 minutes more, or until golden brown. Let cool for 15 minutes before serving.
Homemade fudge
Ingredients
- 1/2 cup of coconut oil
- 3 Tbsp of milk powder
- 1/3 cup of cocoa powder
- 3/4 cup of organic honey
- Sift the cocoa powder into a small bowl. This helps to prevent lumps.
- Place a pot filled a third of the way with water on a burner and set the heat to medium-high. Place a large Pyrex or metal bowl on top. Make sure the water isn't touching the bottom of the bowl.
- Add the cocoa butter or coconut oil to the bowl and stir occasionally until all melted.
- Turn the heat down to medium-low. Then stir in the cocoa powder. Then add in the milk powder and stir until completely incorporated. Follow that up with the honey which is added a third of it at a time until all is incorporated. If you want it less sweet don't add in as much. Once all the ingredients are combined turn the heat completely off. Keep stirring for about 5 minutes.
- Once done, pour the chocolate into your chosen mold, or even ice cube trays. Put it immediately into the freezer for an hour.
- Once the fudge sets, you can eat it. Remove it from the mold and give it a taste.
